Snacks and Light Meals Recipes - Chunky Pan-fried Sandwiches Recipe

Ingredients

Serve 4

  • 8 medium-thick slices of white or whole meal bread, crusts removed if liked

  • 4 slices of cooked ham

  • 1 onion, thinly sliced and separated into rings

  • 125 g/4 oz Cheddar cheese, thinly sliced

  • 50 g/2 oz butter, softened

  • watercress sprigs, to garnish

Method:

  1. Place 4 slices of the bread on a board and cover each one with a slice of ham.

  2. Top with onion rings to taste and then cover with slices of cheese. Top with the remaining bread slices and press down lightly.

  3. Spread a little butter on the top of each sandwich. Heat a large frying pan over moderate heat, without added fat. Fry two of the sandwiches, buttered sides down, over a low heat for 2-3 minutes, until golden brown on the undersides.

  4. Butter the exposed tops of the sandwiches, then carefully turn them over, and fry for a further 3-4 minutes, pressing the sandwiches down with a spatula or fish slice until golden brown on both sides.

  5. Keep warm while frying the remaining sandwiches in the same way. Cut each sandwich into 4 triangles, garnish with watercress sprigs and serve immediately.
