Snacks and Light Meals Recipes - Cucumber Sandwiches Recipe

Ingredients

Serve 4

  • 1 small bunch of watercress, trimmed and finely chopped

  • 50 g/2 oz butter, softened

  • 4 thin slices of white bread

  • 4 thin slices of whole meal bread

  • 5 cm/2 inch piece of cucumber, very thinly sliced

  • watercress sprigs and cucumber slices, to garnish (optional)


Method:

  1. Beat the watercress with the butter until smooth.

  2. Spread the white and whole meal bread with the butter and arrange the cucumber on the white slices of bread.

  3. Top with the whole meal bread. Wrap and chill until ready to serve.

  4. Trim the crusts from the sandwiches and cut them into triangles. Serve garnished with watercress sprigs and cucumber slices, if liked.
