Snacks and Light Meals Recipes - Deep-fried Drumsticks Recipe

Ingredients

Serve 4

  • 2 tablespoons dry sherry

  • 2 tablespoons soy sauce

  • pinch of sugar

  • 4 garlic cloves, crushed

  • 2 teaspoons finely chopped fresh root ginger

  • 4 spring onions, chopped

  • 8 chicken drumsticks

  • 50 g/2 oz plain flour

  • 1-2 eggs, beaten

  • oil, for deep-frying

  • lemon slices and parsley sprigs, to garnish


Method:

  1. Mix the sherry, soy sauce, sugar, garlic, ginger and spring onions in a bowl, add the chicken and turn to coat. Leave for 30 minutes. Remove the chicken; reserving the marinade.

  2. Sift the flour into a bowl and beat in the egg. Gradually beat in the marinade, to form a smooth paste. Dip the chicken into the batter and turn to coat evenly.

  3. Heat the oil in a deep frying pan to 180-190°C (350-375°F) or until a cube of bread browns in 30 seconds, and deep-fry the chicken drumsticks for 12-15 minutes, until golden brown and cooked through.

  4. Drain on kitchen paper. Garnish with lemon and parsley, and serve immediately.
