Method:

Mix the
sherry,
soy sauce, sugar, garlic, ginger and
spring onions in a bowl, add the chicken and turn to
coat. Leave for 30 minutes. Remove the chicken;
reserving the marinade.

Sift the flour into a bowl
and beat in the egg. Gradually beat in the marinade,
to form a smooth paste. Dip the chicken into the
batter and turn to coat evenly.

Heat the oil in a
deep frying pan to 180-190°C (350-375°F) or until a
cube of bread browns in 30 seconds, and deep-fry the
chicken drumsticks for 12-15 minutes, until golden
brown and cooked through.

Drain on kitchen paper.
Garnish with lemon and parsley, and serve
immediately.
