Snacks and Light Meals Recipes - French Onion Flan Recipe

Ingredients

Serve 6-8

Pastry:

  • 250 g/8 oz plain flour

  • 50 g/2 oz butter

  • 50 g/2 oz hard white fat

  • 3 tablespoons iced water

Filling:

  • 40 g/1 1/2 oz butter

  • 500 g/1 lb onions, thinly sliced

  • 2 teaspoons tomato puree

  • 3 eggs

  • 150 ml/1/4 pint milk

  • salt and pepper


Method:

  1. Melt the butter in a frying pan. Add the onions with the tomato puree, sprinkle lightly with salt and pepper, stir well and cook over gentle heat for 15 minutes, stirring occasionally. Remove from the heat and leave to cool.

  2. Meanwhile, make the pastry. Sift the flour with the salt into a mixing bowl and rub in the butter and fat until the mixture resembles fine breadcrumbs.

  3. Stir in the measured water and mix to form a fairly firm dough. Knead lightly until free from cracks. Roll out the pastry on a lightly floured surface and line a 25 cm/10 inch loose-bottomed fluted flan tin set on a baking sheet.

  4. Line the pastry case with greaseproof paper and fill with baking beans or dried beans. Bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 15 minutes.

  5. Lift out the paper and beans and bake for a further 5-10 minutes until the pastry is dry and cooked through. Remove from the oven.

  6. Arrange the onions in the flan case. Beat the eggs with the milk in a bowl and add salt and pepper to taste. Strain into the flan case.

  7. Lower the oven temperature to 180°C (350°F), Gas Mark 4, and bake for 30-35 minutes until the filling is set and lightly golden. Serve hot or cold.
