Snacks and Light Meals Recipes - Fresh Vegetable Pizzas Recipe

Ingredients

Serve 4

  • 2 quantities Basic Pizza Dough, divided into 4 pieces

  • 5 tablespoons olive oil

  • 2 garlic cloves, chopped

  • 1 red onion, finely sliced

  • 2 courgettes, thinly sliced lengthways

  • 1 red pepper, cored, deseeded and cut into thin strips

  • 1 yellow pepper, cored, deseeded and cut into thin strips

  • 4 plum tomatoes, skinned, cored and cut into small wedges

  • 500 g/1 lb asparagus, trimmed

  • 4 thyme sprigs, separated into leaves

  • handful of basil leaves, roughly torn

  • salt and pepper

  • 75 g/3 oz fresh Parmesan shavings (optional), to garnish


Method:

  1. Roll out each piece of dough to a 23 cm/9 inch round. Place the pizza bases on oiled baking sheets and brush them with a little olive oil.

  2. Arrange the vegetables on the bases, sprinkling them with the thyme leaves and roughly torn basil.

  3. Season the pizzas generously with salt and pepper, drizzle with olive oil, and bake at the top of a preheated oven, 230°C (450°F), Gas Mark 8, for 10 minutes.

  4. The vegetables should be slightly charred around the edges as this adds to the flavor.

  5. Garnish with fresh Parmesan shavings, if liked, and serve.
