Snacks and Light Meals Recipes - Granary Roll Fillers Recipe

Ingredients

Serve 4

  • 4 granary rolls

  • 125 g/4 oz full-fat soft cheese

  • 1 tablespoon snipped chives

  • 7.5 cm/3 inch piece of cucumber, halved lengthways and thinly sliced

  • 25 g/1 oz butter, softened

  • 2 hard-boiled eggs, peeled

  • 1 1/2 tablespoons Mayonnaise

  • a little mustard and cress

  • salt and pepper


Method:

  1. Using a sharp knife, carefully make 2 vertical cuts in each roll, taking care not to cut through the bottom crust, to give 2 'pockets' for filling.

  2. Mix the cheese with the chives in a bowl, and spread inside one pocket in each roll. Arrange halved cucumber slices in each cheese-filled pocket, protruding slightly above the top crust.

  3. Spread the remaining pocket in each roll with the butter. Mash the hard-boiled eggs, stir in the mayonnaise, add salt and pepper to taste and use to fill the buttered pockets.

  4. Arrange a little mustard and cress along each egg-filled pocket. Serve immediately.
