Ingredients
Serve 4
4 granary rolls
125 g/4
oz full-fat soft cheese
1 tablespoon snipped chives
7.5 cm/3 inch piece of cucumber, halved
lengthways and
thinly sliced
25 g/1
oz butter, softened
2 hard-boiled eggs, peeled
1 1/2 tablespoons Mayonnaise
a little mustard and cress
salt and pepper
Method:
Using a sharp
knife, carefully make
2
vertical cuts in each roll, taking care not to cut
through the bottom crust, to give 2 'pockets' for
filling.
Mix the cheese with the chives in a bowl, and spread
inside one pocket in each roll. Arrange halved
cucumber slices in each cheese-filled pocket,
protruding slightly above the top crust.
Spread
the remaining pocket in each roll with the butter.
Mash the hard-boiled eggs, stir in the mayonnaise,
add salt and pepper to taste and use to fill the
buttered pockets.
Arrange a little mustard and cress
along each egg-filled pocket. Serve immediately.
