Snacks and Light Meals Recipes - Grilled Mushrooms with Garlic Oil Recipe

Ingredients

Serve 4

  • 75 ml/3 fl oz olive oil

  • 2 garlic cloves, crushed

  • grated rind and juice of 1/2 lime

  • 1 small red chili, deseeded and finely chopped

  • 2 tablespoons chopped parsley

  • 12 large flat mushrooms

  • salt and pepper


Method:

  1. In a small bowl combine all the ingredients except the mushrooms, and season to taste with salt and pepper.

  2. Arrange the mushrooms, stalk side down, on a foil lined grill pan and cook under a preheated grill, as close to the heat as possible, for 3-4 minutes until beginning to moisten.

  3. Flip the mushrooms over and cook for a further 4-5 minutes until cooked through.

  4. Transfer to a serving plate and pour over the dressing. Leave to cool to room temperature, then serve.
