Snacks and Light Meals Recipes - Ham Burgers with Mustard Mayonnaise and Radicchio Recipe

Ingredients

Serve 4

  • 750 g/1 1/2 lb lean beef, finely minced

  • 1 small onion, finely chopped

  • 2 tablespoons Worcestershire sauce

  • 4 brown baps or ciabatta rolls

  • 1 large radicchio head, cut into 8 wedges

  • 2 beef tomatoes, skinned and sliced

  • sea salt and pepper

Mustard mayonnaise:

  • 2 egg yolks

  • 1 tablespoon white wine vinegar

  • 1 tablespoon Dijon mustard

  • 1 tablespoon coarse grain mustard

  • 300 ml/1/2 pint grape seed oil


Method:

  1. Place the meat, onion, Worcestershire sauce and seasoning in a bowl and mix with a fork. With wet hands, shape the meat into 4 patties to fit into the baps or rolls.

  2. To make the mustard mayonnaise, place the egg yolks, vinegar and both mustards in a bowl. Using a hand-held blender, blend.

  3. Slowly pour in the oil, continuing to blend, until the mixture is smooth and creamy. Season to taste with salt and pepper. Alternatively, make the mayonnaise in a food processor.

  4. Heat a griddle pan or nonstick frying pan and cook the prepared burgers for 3 minutes on each side for rare, or 5 minutes for well done. Remove from the griddle and keep warm.

  5. Cut the baps in half and place cut-side down on the griddle to toast and absorb any meat juices. Cook the radicchio wedges for 1 minute on each side.

  6. To assemble, spread the bottom half of each bap with mustard mayonnaise, then place on a wedge of radicchio, a burger, more mustard mayonnaise, half a slice of tomato, another radicchio wedge and more mustard mayonnaise. Cover with the top half of the bap and serve immediately.
