Ham Burgers with
Mustard Mayonnaise and Radicchio Recipe
Ingredients
Serve 4
750
g/1 1/2 lb lean beef, finely minced
1 small onion, finely chopped
2 tablespoons Worcestershire sauce
4 brown baps or ciabatta rolls
1 large radicchio head, cut into
8
wedges
2 beef tomatoes, skinned and sliced
sea
salt and pepper
Mustard
mayonnaise:
2 egg yolks
1 tablespoon
white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon coarse grain mustard
300 ml/1/2 pint grape seed
oil
Method:
Place the meat, onion,
Worcestershire sauce and seasoning in a bowl and mix
with a fork. With wet hands, shape the meat into 4
patties to fit into the baps or rolls.
To make the mustard mayonnaise, place the egg yolks,
vinegar and both mustards in a bowl. Using a
hand-held blender, blend.
Slowly pour in the oil,
continuing to
blend, until the mixture is smooth and creamy.
Season
to
taste with salt and pepper. Alternatively, make the
mayonnaise in a food processor.
Heat a griddle pan or nonstick frying pan and cook
the prepared burgers for 3 minutes on each side for
rare, or 5 minutes for well done. Remove from the
griddle and keep warm.
Cut the baps in half and
place cut-side down on the griddle to toast and
absorb any meat juices. Cook the radicchio wedges
for 1 minute on each side.
To assemble, spread the
bottom half of each bap with mustard mayonnaise,
then place on a wedge of radicchio, a burger, more
mustard mayonnaise, half a slice of tomato, another
radicchio wedge and more mustard mayonnaise. Cover
with the top half of the bap and serve immediately.
