Snacks and Light Meals Recipes - Little Pizza Pies Recipe

Ingredients

Makes 12

  • 175 g/6 oz frozen puff pastry, defrosted

  • 15 g/1/2 oz butter

  • 1 onion, thinly sliced

  • 1 garlic clove, finely chopped

  • 2 teaspoons tomato puree

  • 400 g/13 oz can chopped tomatoes

  • 5 basil leaves, shredded

  • salt and pepper

Topping:

  • 75 g/3 oz mature Cheddar cheese, finely grated

  • 6 black olives, pitted and halved

  • 6 anchovy fillets, halved


Method:

  1. Roll out the pastry thinly on a lightly floured work surface and use to line twelve 6 cm/2 1/2 inch tartlet tins. Chill.

  2. To make the filling, melt the butter in a frying pan, add the onion and garlic and fry gently for about 5 minutes. Add the tomato puree and canned tomatoes and simmer for 30 minutes. Stir in the basil and salt and pepper. Leave to cool.

  3. Divide the tomato mixture among the pies and sprinkle with cheese. Put half an olive in the centre of each pie and arrange a piece of anchovy around it.

  4. Bake the pies in a preheated oven, 200°C (400°F), Gas Mark 6, for 12-15 minutes or until the pastry is browned and cheese melted. Serve warm.
