Snacks and Light Meals Recipes - Many Tomato Pizzas Recipe

Ingredients

  • 1 quantity Basic Pizza Dough, divided in half

  • 2 large ripe plum tomatoes, sliced

  • 125 g/4 oz red cherry tomatoes, halved

  • 125 g/4 oz yellow pear tomatoes, halved

  • 4 sun-dried tomatoes in oil, drained and roughly chopped

  • handful of basil leaves, torn into pieces

  • 2 teaspoons grated lemon rind

  • 12 black olives, pitted

  • 4 tablespoons olive oil

  • sea salt and pepper


Method:

  1. Roll out each piece of dough to a 23 cm/9 inch round. Place the pizza bases on an oiled baking sheet.

  2. Dry the tomato slices on kitchen paper. Arrange all the tomatoes over the pizzas, scattering over the basil, lemon rind and olives. Season well and drizzle over a little olive oil.

  3. Place at the top of a preheated oven, 230°C (450°F), Gas Mark 8, for 20 minutes until the bases are crisp and the tops golden. Serve immediately.
