Many Tomato Pizzas

Ingredients
Serve 2
1 quantity Basic Pizza
Dough, divided in half
2 large ripe plum
tomatoes, sliced
125 g/4 oz red cherry tomatoes,
halved
125 g/4 oz yellow pear tomatoes, halved
4 sun-dried
tomatoes in oil, drained and roughly chopped
handful
of basil leaves, torn into pieces
2 teaspoons grated
lemon rind
12 black olives,
pitted
4 tablespoons olive
oil
sea salt and pepper
Method:
Roll out
each
piece of dough to a 23 cm/9 inch round. Place the pizza
bases on an oiled baking sheet.
Dry the tomato
slices on kitchen paper. Arrange all the tomatoes
over the pizzas, scattering over the basil, lemon
rind and olives. Season well and drizzle over a
little olive oil.
Place at the top of a preheated
oven, 230°C (450°F), Gas Mark 8, for 20 minutes
until
the bases are crisp and the tops golden. Serve
immediately.
