Snacks and Light Meals Recipes - Marinated Goats' Cheese Recipe

Ingredients

Serve 8

  • 1 teaspoon fennel seeds

  • 1 teaspoon pink peppercorns

  • 250 g/8 oz goats' cheese, such as Sainte-Maure

  • 2 garlic cloves

  • 2 small green chilies, bruised

  • 2 rosemary sprigs, bruised

  • 2 bay leaves, bruised

  • olive oil, to cover

  • crusty bread, to serve


Method:

  1. Put the fennel seeds and peppercorns in a small, heavy-based frying pan and heat gently until they start to pop and release an aroma. Leave to cool completely.

  2. Roll the cheese into small balls and place in a bowl or jar. Add the cooled fennel seeds and peppercorns, then add the remaining ingredients with sufficient olive oil to cover.

  3. Store in a cool place for at least 3 days but no longer than 1 week. Serve the cheese balls with a little of the oil and chunks of French bread.
