Snacks and Light Meals Recipes - Onion Tortilla Recipe

Ingredients

Serve 4

  • 40 g/1 1/2 oz butter

  • 1 large onion, halved and thinly sliced

  • 125 g/4 oz cabbage, finely shredded

  • 3 eggs, beaten

  • 1 tablespoon cold water

  • 125 g/4 oz Cheddar or Edam cheese, finely grated

  • salt and pepper

  • tomato wedges, to garnish


Method:

  1. Melt 25 g/1 oz of the butter in a saucepan, add the onion and cabbage, and fry over low heat for 3 minutes, stirring frequently.

  2. Beat the eggs with the measured water in a bowl. Add salt and pepper to taste. Stir in half the cheese.  

  3. Melt the remaining butter in a 23 cm/9 inch frying pan. Add the softened onion and cabbage, pour over the egg and cheese mixture, and cook over moderately high heat for 3 minutes or until lightly golden on the underside.

  4. Sprinkle the surface of the tortilla with the remaining cheese. Place under a preheated moderately hot grill for 2-3 minutes until the cheese is melted and the tortilla is set.

  5. Cut into wedges, garnish with tomatoes and serve immediately.
