Ingredients
Serve 4
50 g/2 oz
butter
1 tablespoon
sunflower oil
1 large onion,
chopped
1 garlic clove,
crushed
1 green pepper,
cored, deseeded and cut into thin strips
4 streaky bacon
rashers, rinded and diced
4 eggs, beaten
1 1/2 tablespoons
cold water
salt and pepper
4 floury baps,
warmed
Method:
Melt 15 g/1/2 oz of the butter with the oil in a 23
cm/9 inch frying pan with a flameproof handle, add
the onion, garlic, green pepper and bacon and fry
gently for about 5 minutes, stirring from time to
time.
Meanwhile, whisk the
eggs
with the measured water in a bowl. Add salt and
pepper to taste. Pour into the onion mixture in the
pan and stir lightly with a fork.
Cook over a gentle
heat for about 3 minutes, until the omelets is
golden brown underneath.
Place the pan under a
preheated hot grill for 2-3 minutes until the open
omelets is set on top. Turn on to a board and cut
into quarters.
Split the baps and spread with the
remaining butter. Place an omelets quarter in each
bap and serve immediately.
