Piquant Potatoes

potatoes
25 g/1 oz
butter
125 g/4 oz
Cheddar cheese, grated
125 g/4 oz
sliced cooked ham, chopped
2 tablespoons
sweet corn or tomato relish
salt and pepper
Method:
Prick the potatoes allover and wrap in foil. Bake in
a preheated oven, 200°C (400°F),
Gas Mark 6, for 1-1/2 hours, until soft when
squeezed gently.
Cut a large cross in each potato,
cutting through the foil. Very carefully squeeze
each potato and scoop out the flesh into a bowl,
taking care not to pierce the potato skins or foil.
Add the butter to the potato and mash well until
smooth. Stir in the cheese, ham and relish. Add salt
and pepper to taste, and mix well.
Spoon the mixture
back into the skins, return to the oven and cook
for a further 15 minutes. Serve immediately.
