Snacks and Light Meals Recipes - Prawn and Rocket Piadina Recipe

Ingredients

Serve 4

Dough:

  • 125 g/4 oz plain flour

  • 1/2 teaspoon salt

  • 5 g/1/4 oz butter, softened

  • 65 ml/2 1/2 fl oz tepid water

Topping:

  • 4 tablespoons olive oil, plus extra to serve

  • 2 large garlic cloves, crushed

  • pinch of crushed chili flakes

  • 1/2 teaspoon dried oregano

  • 500 g/1 lb raw tiger prawns, peeled and deveined

  • 175 g/6 oz rocket

  • 175 g/6 oz feta cheese, crumbled

  • pepper


Method:

  1. To make the dough, sift the flour and salt into a bowl and rub in the butter until the mixture resembles breadcrumbs.

  2. Add the measured water and mix to form a soft dough. Knead on a lightly floured surface for 10 minutes. Wrap in cling film and leave to rest for 30 minutes.

  3. Divide the dough into 4 pieces and roll each one out to a 12.5 cm/5 inch round. Cover with a clean tea towel while preparing the topping.

  4. Heat the oil in a large frying pan. As soon as it stops foaming, add the garlic, chili flakes and dried oregano, stir well and immediately add the prawns. Cook for 3-4 minutes until the prawns are cooked. Stir in the rocket and cook until wilted. Keep warm.

  5. Heat a griddle or heavy-based frying pan until hot. Cook 1 dough base at a time for about 1 minute, flip over and cook the other side for a further 30 seconds until dotted brown.

  6. Transfer the piadina to warmed plates and top with the prawn and rocket mixture, scatter over the feta, drizzle with extra olive oil and serve immediately.

Note: Piadina, the precursor of the pizza, is a small disc of unleavened dough that is dry-fried on a very hot griddle.
