Ingredients
Serve 6
250 g/8 oz plain flour pinch of salt
125 g/4 oz butter
1 egg yolk
2-3 tablespoons iced water
Filling:
50 g/2 oz
butter
150 g/5 oz smoked bacon, cut into small pieces
350 ml/12 fl oz double cream
3 eggs
1/4 teaspoon freshly grated nutmeg
salt and pepper
Method:
To make the pastry, sift the
flour and salt into a
large mixing
bowl and rub in the butter until the mixture
resembles breadcrumbs.
Mix in the egg yolk and
enough of the measured water to bind the
ingredients. Knead the dough lightly and then chill
in the refrigerator for 30 minutes.
Roll out the
pastry
on a
lightly floured surface and use to line a buttered 23
cm/9 inch loose-bottomed flan tin. Prick the base of
the flan with a fork.
Melt half of the butter in a
frying pan, add the bacon pieces and cook gently
until lightly colored. Put the cream and eggs in a
bowl and whisk together. Add the grated nutmeg and
season with salt and pepper.
Sprinkle the cooked bacon pieces over the base
of the pastry
case and dot with the remaining butter. Pour in
the cream and egg mixture.
Bake in a preheated oven,
at 200°C (400°F),
Gas Mark
6, for 30 minutes, or until
set and golden brown. Serve warm.
