Snacks and Light Meals Recipes - Salami Stacks Recipe

Ingredients

Serve 4

  • 50 g/2 oz butter, softened

  • 50 g/2 oz full-fat soft cheese

  • 6 slices of crusty white or brown bread

  • 6 thin slices of salami, rinded

  • 50 g/2 oz coleslaw

  • a little mustard and cress

  • crisp lettuce leaves

  • 1 large tomato, thinly sliced

  • salt and pepper


Method:

  1. In a bowl, combine the butter and soft cheese, and mix well using a wooden spoon.

  2. Place 2 slices of bread on a board and spread with the cheese mixture. Add 3 slices of salami to each and top both with coleslaw and a little mustard and cress.

  3. Spread 2 more slices of bread with the cheese mixture and place, spread side down, on each sandwich. Spread the exposed surfaces of the, bread with more of the cheese mixture.

  4. Add a layer of lettuce and tomato to each stacked sandwich and season with salt and pepper. Spread the remaining slices of bread with cheese mixture and invert on each sandwich.

  5. Press down firmly, then cut each sandwich into quarters. Keep the layers together with a cocktail stick, if necessary. Serve immediately.
