Snacks and Light Meals Recipes - Sausage Slice Recipe

Ingredients

Serve 6

  • 1 tablespoon oil

  • 1 small onion, chopped

  • 500 g/1 lb sausage meat

  • 1 teaspoon dried mixed herbs

  • 1 egg, beaten

  • 400 g/13 oz frozen puff pastry, defrosted

  • 1 small cooking apple, peeled, cored and sliced

  • salt and pepper


Method:

  1. Heat the oil in a small frying pan, add the onion and fry gently until soft. Tip into a bowl, cool slightly, then add the sausage meat with the herbs. Season to taste and stir in half the egg.

  2. Roll out three-quarters of the pastry to a 25 cm/10 inch square. Place on a greased baking sheet. Spread the mixture over the pastry to within 1 cm/1/2 inch of the edge.

  3. Arrange the apple slices on top. Dampen the edges of the pastry with water. Roll out the remaining pastry.

  4. Cut into 1 cm/1/2 inch wide strips and make a woven trellis over the top of the apples. Brush with the remaining egg and chill for 30 minutes.

  5. Place in a preheated oven, 220°C (425°F), Gas Mark 7, for 15 minutes. Reduce the oven temperature to 180°C (350°F), Gas Mark 4, and cook for a further 15-30 minutes. Serve hot.
