Snacks and Light Meals Recipes - Smoked Mozzarella and Tomato Puff Tartlets Recipe

Ingredients

Serve 8

  • 250 g/8 oz frozen puff pastry, defrosted, and divided into 8 pieces

  • 2 tablespoons Pesto

  • 2 large ripe tomatoes, each cut into 4 slices

  • 125 g/4 oz smoked mozzarella, cut into 8 slices

  • salt and pepper


Method:

  1. Rollout each piece of the pastry thinly on a lightly floured surface.

  2. Using a 10 cm/4 inch pastry cutter, stamp out 8 circles. Prick the pastry circles with a fork and place on baking sheets.

  3. Spread each circle of pastry with pesto, leaving a thin border around the edges. Top with a slice of tomato and then a slice of mozzarella. Season with salt and pepper.

  4. Bake the tartlets at the top of a preheated oven, 220°C (425°F), Gas Mark 7, for 10-15 minutes until puffed up and golden. Serve warm.

Note: Smoked mozzarella is available from good cheese shops or supermarkets. Use another smoked cheese or plain mozzarella as an alternative.
