Smoked Salmon with
Scrambled Eggs Recipe

25 g/1 oz butter
6 large eggs
2 tablespoons milk
2 tablespoons cream (optional)
75 g/3 oz smoked salmon, cut into narrow strips
2
teaspoons finely snipped chives
2-4 slices wheaten bread, toasted and buttered
salt
and pepper
Method:
Melt the butter in a saucepan until foaming. Place
the eggs in a bowl and mix well with a fork. Add the
milk and season with salt and pepper.
Pour the eggs
into the foaming butter. Stir with a wooden spoon,
over a gentle heat, scraping the bottom of the pan
and bringing the outside edges to the middle.
When the eggs
form soft
creamy curds and are barely
set, remove the pan from the heat, stir in the
cream, if using, salmon and chives.
Place the hot
brown toast on warmed serving plates, pile the eggs
on top, and serve immediately.
