Snacks and Light Meals Recipes - Souffled Ham Rarebits Recipe

Ingredients

Serve 4

  • 4 slices of bread, crusts removed if liked

  • 125 g/4 oz Red Leicester cheese, thinly sliced

  • 4 thin slices of cooked ham

  • 4 eggs, separated

  • 2 teaspoons milk

  • salt and pepper

  • parsley sprigs, to garnish


Method:

  1. Toast the bread slices on one side only. Arrange, toasted sides down, on a baking sheet. Top each with a slice of cheese and a slice of ham. 

  2. Beat the egg yolks with the milk in a bowl. Add salt and pepper to taste.

  3. In a separate, grease-free bowl, whisk the egg whites until stiff peaks form, then gently fold into the egg yolk mixture, using a large metal spoon.

  4. Spoon a portion of the egg mixture over each rarebit. Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 15-20 minutes until the soufflé topping is set and golden brown.

  5. Garnished with parsley sprigs and serve immediately.
