Spicy Beef Burgers

Ingredients
Serve 4-6

kg/2 lb minced beef
2 tablespoons green peppercorns
1 tablespoon chopped thyme
2 teaspoons Worcestershire sauce
2 teaspoons
French mustard
salt
To serve:
8 burger buns
8 lettuce leaves selection of relishes
1 onion, sliced
4
tomatoes, sliced
Method:
Put the
beef
in a bowl and season well with salt. Stir in
the peppercorns, thyme, Worcestershire sauce and
mustard; mix well. Divide into 8 portions and form
into flat patties.
Cook
under a preheated moderate grill, or on a
barbecue grid 10 cm/4 inches above the coals, for
3-5 minutes each side, according to taste.
Cut the
buns in half and toast the cut sides. Arrange a
lettuce leaf on each bun base, top with a burger and
relish.
Arrange onion and tomato slices on top and
replace
the bun lid. Serve immediately.
