Swiss Cheese
Fondue Recipe
Ingredients
Serve 4-6
1 garlic clove,
halved
150 ml/1/4
pint dry white wine
1 teaspoon
lemon juice
175 g/6 oz
Gruyere cheese, grated
175 g/6 oz
Emmental cheese, grated
1 teaspoon
corn flour
2 tablespoons
kirsch
pepper
grated nutmeg
day-old French
bread, cut into bite-sized cubes, to serve
Method:
Rub the inside of a fondue dish with the cut garlic.
Pour in the wine and lemon juice, and heat gently
until bubbling.
Gradually stir in the cheeses and
heat slowly, stirring, until the cheeses melt and
begin to cook.
Blend the
corn flour with the kirsch.
Add to the cheese and cook for 2-3 minutes,
stirring, until the mixture is thick and creamy. Add
pepper and nutmeg to taste.
Place over a spirit
burner and keep at a simmer. Use long fondue forks
to dip the bread cubes into the hot fondue.
