- Vegetable Calzone

1 tablespoon olive oil

1 large onion, thinly
sliced

1 red pepper, cored,
deseeded and sliced

1 garlic clove, crushed

500 g/1 lb frozen leaf
spinach, defrosted

175 g/6 oz mozzarella
cheese, diced

50 g/2 oz pine nuts,
toasted

40 g/1 1/2 oz sultanas
-
1/4 teaspoon grated nutmeg

2 quantities Basic Pizza
Dough, divided into 6 pieces

Method:

Heat the oil
in a frying pan, add the onion, pepper and
garlic, and fry until golden. Remove from the
heat.

Drain the
spinach in a colander, pressing down firmly to
squeeze out any moisture, then chop finely.

Stir into the
onion mixture, then stir in the remaining
ingredients, except the pizza dough, and set
aside to cool. Roll out each piece of dough to
an 18 cm/7 inch round.

Divide the
filling between the rounds, brush the edges with
water and fold the dough over, pressing together
firmly to seal the edges and enclose the
filling.

Transfer the
parcels to a large oiled baking sheet and
lightly brush each one with water.

Place at the
top of a preheated oven, 200°C (400°F), Gas Mark
6, for 20 minutes until the calzone are golden.
Remove from the oven and leave to rest for 10
minutes before serving.
Note: A calzone is a stuffed pizza or one that is
simply folded in half and sealed.
