Vegetable Fajitas

Ingredients
Serve 4
2 tablespoons
olive oil
2 large onions,
thinly sliced
2 garlic
cloves, crushed
2 red peppers,
cored, deseeded and thinly sliced
2 green
peppers, cored, deseeded and thinly sliced
4
green chilies, deseeded and thinly sliced
2 teaspoons
chopped oregano
250 g/8 oz button
mushrooms, sliced
salt and pepper
To serve:
12 soft
tortillas, warmed
salsa
soured cream
Method:
Heat
the
olive oil in a
large
frying pan, add the onions
and garlic, and gently sauté for about 5 minutes
until they are soft and golden brown. They should be
melting and almost caramelized.
Add the peppers,
chilies and oregano, and stir well. Sauté gently
for 10 minutes more, until cooked and tender.
Add
the mushrooms and cook quickly for 1 more minute,
stirring to mix thoroughly with the other
vegetables. Season to taste with salt and pepper.
Spoon the sizzling hot vegetable mixture into the
warmed tortillas and fold over or roll up. Serve
very hot with salsa and plenty of soured cream.
