Snacks and Light Meals Recipes - Winchester Sausages Recipe

Ingredients

Makes 10-12

  • 250 g/8 oz belly pork, minced

  • 250 g/8 oz lean pork, minced

  • 25 g/1 oz pork fat, minced

  • 6 tablespoons milk

  • 75 g/3 oz whole meal breadcrumbs

  • 1 garlic clove, crushed

  • 1/4 teaspoon each ground mace and allspice

  • 1 tablespoon each chopped parsley and sage

  • 1 teaspoon chopped thyme

  • salt and pepper

  • about 1 meter/3 ft sausage casing


Method:

  1. Mix the pork and fat together in a bowl. Pour the milk over the breadcrumbs and leave for 10 minutes. Squeeze the breadcrumbs dry and add to the meat.

  2. Add the garlic, spices, herbs, and salt and pepper and mix together thoroughly.

  3. Using a piping bag fitted with a large plain nozzle, carefully force the sausage mixture into the casings. Push the mixture evenly along the casing then twist to form sausages.

  4. Separate the sausages, prick the skins and cook under a preheated moderate grill, or on a barbecue grid 10 cm/4 inches above the coals, for 15-20 minutes, until golden brown and thoroughly cooked.
