Soups and Starters Recipes - Butter Beans in Tomato Sauce Recipe

Ingredients

Serve 6

  • 250 g/8 oz dried butter beans, soaked overnight in cold  water

  • 2 x 400 g/13 oz cans chopped tomatoes

  • 300 ml/1/2 pint Vegetable Stock

  • 2 garlic cloves, chopped

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon chopped oregano

  • 2 bay leaves

  • 1 teaspoon caster sugar

  • 1 tablespoon lemon juice

  • 2 tablespoons chopped dill

  • salt and pepper

  • crusty bread, to serve


Method:

  1. Drain the soaked beans, wash well and set aside. Put the tomatoes, stock, garlic, olive oil, oregano, bay leaves and sugar in a large saucepan and bring to the boil.

  2. Stir in the beans, return to the boil, cover and simmer over a low heat for 1 1/2 hours, or until the beans are very tender.

  3. Remove the lid and simmer for a further 30 minutes until the sauce is reduced and thickened.

  4. Stir in the lemon juice, chopped dill and season to taste with salt and pepper. Leave to cool slightly. Serve warm with some crusty bread.
