500 g/1 lb
carrots, grated

tablespoon ground coriander
-
175 ml/6 fl
oz freshly squeezed orange juice

300 ml/1/2
pint water
-
50 g/2 oz medium fat soft cheese
-
30 g/1
1/4 oz coriander leaves
-
salt and
pepper
-
rustic
bread, to serve
Method:
-
Place the grated carrot in a saucepan, together with
the ground coriander, orange juice and water.
-
Cover
and simmer for 40 minutes until the carrots are
cooked. Cool and transfer to a food processor or
blender with a little of the cooking liquid.

Add the
soft cheese and coriander leaves and process until
smooth. Season to taste with salt and pepper and
blend again.

Spoon into small dishes and chill
before serving with rustic bread.
