Courgette Soup Recipe
Ingredients

2
tablespoons olive oil
-
4 shallots,
diced
-
1 garlic clove,
chopped
-
6 courgettes,
diced
-
2 potatoes,
chopped
-
1.2litres/2
pints Chicken Stock
-
75 g/3 oz
farfallini or other small dried pasta
-
grated rind and
juice of 1 lemon
-
large handful
of chives, chopped
-
salt and pepper
Method:
-
Heat
the oil in a
saucepan. Add the
shallots and garlic and fry over a low heat for
3 minutes.

Add the courgettes, potatoes
and
stock,
bring to the boil and simmer for 15 minutes. Rub
the mixture through a sieve or
process
in a food processor or blender until smooth.

Add the
pasta and cook for about 7 minutes until soft.
Stir in the lemon rind, juice and chives.
-
Season
to taste with salt and pepper and serve
immediately.
