Soups and Starters Recipes - Courgette and Yoghurt Soup Recipe

Ingredients

Serve 4-6

  • 50 g/2 oz butter or margarine

  • 1 onion, chopped

  • 500 g/1 lb courgettes, cut into 5 mm/1/4 inch slices

  • 900 ml/1 1/2 pints Chicken Stock

  • 1 mint sprig

  • salt and pepper

  • 150 ml/1/4 pint natural yogurt, plus extra to garnish brown bread and butter, to serve (optional)


Method:

  1. Melt the butter or margarine in a large saucepan. Add the onion and courgettes and fry gently for 5 minutes.  Add the stock and mint and season to taste with salt and pepper.

  2. Bring to the boil, lower the heat, cover the pan and simmer for 20-30 minutes, or until the courgettes are soft.

  3. Reserve a few courgette slices to garnish and transfer the soup to a food processor or blender and process to a smooth puree. Alternatively, rub it through a sieve.

  4. Transfer the soup to a bowl, stir in the yogurt and chill for 3 hours.

  5. Serve in chilled individual soup bowls, garnished with the reserved courgette slices and the extra yogurt. Accompany with thin slices of brown bread and butter, if liked.
