6 large potatoes
with unblemished skins
4 tablespoons olive
oil
2 teaspoons coarse
sea salt
2 teaspoons
coarsely crushed black peppercorns
200 g/7 oz cream cheese
8 tablespoons
single cream
3 tablespoons
snipped chives
salt and pepper
Method:
Cut each potato into six
pieces. Peel the potato pieces thickly and carefully.
Put the skins in a bowl and drizzle with oil. (Use the
potato flesh in another recipe.) Drain the skins and arrange on a baking sheet.
Sprinkle
with coarse sea salt and crushed peppercorns. Bake in a
preheated oven, 200°C (400°F), Gas Mark 6, turning
occasionally, for 20-25 minutes.
Beat the cream cheese
until smooth, then mix with the cream and chives. Season
to taste with salt and pepper, spoon into a bowl, and
serve with the hot potato skins.
