Soups and Starters Recipes - Crispy Potato Skins Recipe

Ingredients

Serve 8

  • 6 large potatoes with unblemished skins

  • 4 tablespoons olive oil

  • 2 teaspoons coarse sea salt

  • 2 teaspoons coarsely crushed black peppercorns

  • 200 g/7 oz cream cheese

  • 8 tablespoons single cream

  • 3 tablespoons snipped chives

  • salt and pepper


Method:

  1. Cut each potato into six pieces. Peel the potato pieces thickly and carefully.

  2. Put the skins in a bowl and drizzle with oil. (Use the potato flesh in another recipe.) Drain the skins and arrange on a baking sheet.

  3. Sprinkle with coarse sea salt and crushed peppercorns. Bake in a preheated oven, 200°C (400°F), Gas Mark 6, turning occasionally, for 20-25 minutes.

  4. Beat the cream cheese until smooth, then mix with the cream and chives. Season to taste with salt and pepper, spoon into a bowl, and serve with the hot potato skins.
