Cauliflower Soup Recipe

1 tablespoon sunflower oil
1 onion, sliced
2 teaspoons curry powder (or to taste)
1 small cauliflower, roughly chopped
900 ml/1
1/2 pints Chicken Stock
salt
and pepper
4 tablespoons sunflower seeds, to garnish
Method:
Heat the oil in a large saucepan. Add the onion
and fry over a moderate heat for 2 minutes. Stir
in the curry powder and cook for 1 minute.
Add
the cauliflower and stock, season with salt and
pepper and bring to the boil. Cover the pan, lower the heat and simmer
for 20 minutes.
Cool slightly, then
transfer the vegetables and stock to a food
processor or blender and process to a smooth
puree. Alternatively, rub them through a
sieve.
Return the puree to the rinsed
pan. Taste and adjust the seasoning if necessary
and reheat.
Serve the soup in warmed bowls,
garnished with the sunflower seeds.
