Hot and Sour Prawn

1.2liters/2
pints Thai Fish Stock
4 lime
leaves, torn
1 lemon grass stalk,
finely sliced diagonally
2.5 cm/1 inch piece of galangal or
fresh root ginger, sliced
1 tablespoon
palm sugar or light muscovado sugar
5
tablespoons lime juice
2 tablespoons chili oil
or 12
small green chilies, chopped
12-16 raw
prawns
salt and pepper
coriander sprigs, to
garnish
Method:
Put the stock, lime leaves, lemon grass,
galangal or ginger, sugar, lime juice and chili
oil or chopped chilies in a large wok or
saucepan and bring to the boil.
Lower the heat
and simmer gently for 15 minutes. Add the prawns and cook for 1 minute until they have
turned pink and are cooked through.
Season to taste with salt and pepper and serve
immediately, garnished with sprigs of coriander.
