Soups and Starters Recipes - Hot and Sour Prawn Soup Recipe

Ingredients

Serve 4

  • 1.2liters/2 pints Thai Fish Stock

  • 4 lime leaves, torn

  • 1 lemon grass stalk, finely sliced diagonally

  • 2.5 cm/1 inch piece of galangal or fresh root ginger, sliced

  • 1 tablespoon palm sugar or light muscovado sugar

  • 5 tablespoons lime juice

  • 2 tablespoons chili oil or 12 small green chilies, chopped

  • 12-16 raw prawns

  • salt and pepper

  • coriander sprigs, to garnish


Method:

  1. Put the stock, lime leaves, lemon grass, galangal or ginger, sugar, lime juice and chili oil or chopped chilies in a large wok or saucepan and bring to the boil.

  2. Lower the heat and simmer gently for 15 minutes. Add the prawns and cook for 1 minute until they have turned pink and are cooked through.

  3. Season to taste with salt and pepper and serve immediately, garnished with sprigs of coriander.
