8 veal or
lambs' kidneys

tablespoons lemon juice

tablespoons olive oil

1 garlic
clove, crushed

125 g/4 oz
pancetta, chopped

50 ml/2 fl
oz dry sherry
-

tablespoons chopped parsley
-
salt and pepper
Method:

Halve the kidneys and cut out the white cores. Place
the kidneys in a bowl, add the lemon juice and set
aside for 10 minutes.

Heat
the oil in a frying pan. Add the kidneys, garlic and
pancetta and fry over a high heat, stirring
constantly, for 3-4 minutes until browned.

Add the sherry and simmer for a further 3-4 minutes
until the sherry is reduced and the kidneys cooked
through.

Sprinkle over the parsley, season to taste
with salt and pepper and serve at once.
