Soups and Starters Recipes - Kidneys Cooked with Sherry Recipe

Ingredients

Serve 4

  • 8 veal or lambs' kidneys

  • 4 tablespoons lemon juice

  • 2 tablespoons olive oil

  • 1 garlic clove, crushed

  • 125 g/4 oz pancetta, chopped

  • 50 ml/2 fl oz dry sherry

  • 2 tablespoons chopped parsley

  • salt and pepper


Method:

  1. Halve the kidneys and cut out the white cores. Place the kidneys in a bowl, add the lemon juice and set aside for 10 minutes.

  2. Heat the oil in a frying pan. Add the kidneys, garlic and pancetta and fry over a high heat, stirring constantly, for 3-4 minutes until browned.

  3. Add the sherry and simmer for a further 3-4 minutes until the sherry is reduced and the kidneys cooked through.

  4. Sprinkle over the parsley, season to taste with salt and pepper and serve at once.
