Soups and Starters Recipes - Pork and Bamboo Shoot Soup Recipe

Ingredients

Serve 2

  • 450 ml/1/4 pint Thai Chicken Stock

  • 10 black peppercorns, crushed

  • 2 garlic cloves, crushed

  • 5 garlic cloves, roughly chopped

  • 125 g/4 oz minced pork

  • 4 1/2 teaspoons light soy sauce

  • 100 g/3 1/2 oz bamboo shoots

  • 3 tablespoons Thai fish sauce

  • pepper 

To garnish:

  • 1 spring onion, diagonally sliced

  • coriander leaves


Method:

  1. Put the stock in a large saucepan and bring to the boil. Lower the heat, add the peppercorns and crushed and chopped garlic.

  2. Meanwhile, mix together the pork and soy sauce and season with pepper. Form the mixture into small meatballs.

  3. Add them to the simmering stock and cook for 4 minutes. Add the bamboo shoots and simmer gently for 5 minutes.

  4. Stir in the fish sauce and serve, garnished with the spring onion and coriander leaves.
