Soups and Starters Recipes - Red Lentil Soup Recipe

Ingredients

Serve 4-6

  • 4 streaky bacon rashers, rinded and diced

  • 1 onion, sliced

  • 125 g/4 oz celeriac, peeled and chopped

  • 125 g/4 oz red lentils, washed and drained

  • 1.2/liters/2 pints Chicken Stock

  • 1/2 teaspoon dried mixed herbs

  • salt and pepper

  • croutons or crusty bread, to serve


Method:

  1. Place the bacon in a large nonstick saucepan and heat gently until the fat runs.

  2. Add the onion and fry gently for 5 minutes until softened.  Add the celeriac and stir well to mix.

  3. Stir in the lentils, stock and herbs and season with salt and pepper to taste. Bring to the boil, lower the heat and simmer for 45 minutes-1 hour, or until the lentils are tender.

  4. Transfer the soup to a food processor or blender and process to a smooth puree. Alternatively, rub it through a sieve.

  5. Return the soup to the rinsed pan, reheat gently and adjust the seasoning to taste.

  6. Serve in warmed soup bowls with croutons or crusty bread broken into large chunks.
