Tomatoes with Goats' Cheese Recipe

500 g/1 lb cherry tomatoes on the vine

2 garlic
cloves, sliced

2
thyme sprigs

tablespoons extra virgin olive oil

slices of bread, toasted

175 g/6 oz
fresh goats' cheese, sliced

salt and pepper
Method:
-
Place the tomatoes, still attached to the vine, in a
shallow roasting tin.

Scatter over the garlic and thyme
and drizzle over the oil. Season with salt and pepper.

Cook in a preheated oven, 230°C (450°F), Gas Mark 8, for 15-20 minutes until softened and browned.

Spoon
the tomatoes on to toasted bread, top with the goats'
cheese and pour over the pan juices. Serve immediately.
