Soups and Starters Recipes - Roasted Vine Tomatoes with Goats' Cheese Recipe

Ingredients

Serve 4

  • 500 g/1 lb cherry tomatoes on the vine

  • 2 garlic cloves, sliced

  • 2 thyme sprigs

  • 6 tablespoons extra virgin olive oil

  • 4 slices of bread, toasted

  • 175 g/6 oz fresh goats' cheese, sliced

  • salt and pepper


Method:

  1. Place the tomatoes, still attached to the vine, in a shallow roasting tin.

  2. Scatter over the garlic and thyme and drizzle over the oil. Season with salt and pepper.

  3. Cook in a preheated oven, 230°C (450°F), Gas Mark 8, for 15-20 minutes until softened and browned.

  4. Spoon the tomatoes on to toasted bread, top with the goats' cheese and pour over the pan juices. Serve immediately.
