Soups and Starters Recipes - Smoked Salmon Mousse Recipe

Ingredients

Serve 8

  • 175 g/6 oz smoked salmon pieces

  • 50 g/2 oz cream cheese

  • 150 ml/1/4 pint soured cream

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon grated lemon rind

  • cayenne pepper 

To serve:

  • crudités

  • pumpernickel, thinly sliced


Method:

  1. Put the smoked salmon into a food processor or blender and process for a few seconds.

  2. Add the cream cheese, soured cream, lemon juice and rind, and process until smooth.

  3. Season the salmon mousse to taste with cayenne pepper. Serve with crudités and thinly sliced pumpernickel.
