Special Occasions Recipes - Baked Scallops with Butter and Breadcrumbs Recipe

Ingredients

Serves 4

  • 8-10 scallops with their shells, washed and prepared

  • 125 g/4 oz butter

  • 4 tablespoons fresh breadcrumbs

  • salt and pepper

  • 2 tablespoons chopped parsley, to garnish


Method:

  1. Remove the scallops from their shells, reserving 4 of the rounded shell halves. Chop the white flesh of the scallops coarsely, leaving the orange coral whole.

  2. Divide the chopped scallops and coral evenly between the 4 shells and season to taste with salt and pepper. Dot the scallops with half the butter.

  3. Sprinkle the breadcrumbs equally between the shells and use the remaining butter to dot over the tops.

  4. Cook in the middle of a preheated oven, 180°C (350°F), Gas Mark 4, for about 30 minutes, or until the top is crisp and bubbly. Serve immediately, sprinkled with the parsley.
