Special Occasions Recipes - Ceviche of Salmon Recipe

Ingredients

Serves 2

  • 175 g/6 oz piece of salmon fillet

  • lemon juice, for sprinkling

  • olive oil, for sprinkling

  • salt and pepper

  • chopped dill or fennel, to garnish

  • brown bread and butter, to serve


Method:

  1. Using a sharp knife, cut down through the fillet of salmon into very thin slices - about the same thickness as sliced smoked salmon.

  2. Arrange the raw salmon on two plates in a single layer. Sprinkle the salmon with lemon juice and olive oil, and season to taste with salt and pepper.

  3. Garnish with dill or fennel. Serve immediately with brown bread and butter.
