Special Occasions Recipes - Chestnut Roulade Recipe

Ingredients

Serves 8

  • 3 eggs, separated

  • 125 g/4 oz caster sugar

  • 250 g/8 oz unsweetened chestnut puree

  • grated rind and juice of 1 orange

  • icing sugar, for sprinkling

  • 300 ml/1/2 pint double cream

  • 2 tablespoons Grand Marnier

  • finely shredded orange rind, to decorate


Method:

  1. Whisk the egg yolks with the sugar until thick and creamy. Put the chestnut puree in a bowl with the orange juice and beat until blended, then whisk into the egg mixture.

  2. Whisk the egg whites until fairly stiff and fold in carefully. Turn into a lined and greased 20 x 30 cm/8 x 12 inch Swiss roll tin.

  3. Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 25-30 minutes, until firm. Cool for 5 minutes, then cover with a clean damp cloth and leave until cold.

  4. Carefully turn the roulade onto a sheet of grease proof paper, sprinkled thickly with icing sugar. Peel off the lining paper.

  5. Place the cream, grated rind and liqueur in a bowl and whip until stiff. Spread three-quarters over the roulade and roll up like a Swiss roll.

  6. Transfer to a serving dish, pipe the remaining cream along the top and decorate with orange rind.
