Figs with Parma
Ham Recipe

4 figs

2 tablespoons lemon juice

4
tablespoons extra virgin olive oil

handful of
basil, roughly torn

12 paper-thin slices of Parma
ham

salt and pepper
Method:

Cut the figs into quarters and remove the stems.

Place them in a dish with the lemon juice, olive
oil, roughly torn basil leaves and season with
salt and pepper.

Mix well and allow to stand for
5 minutes.
Arrange the Parma ham on a serving plate then
spoon the figs over the ham. Serve at room
temperature.
Note: This
recipe is very simple and relies heavily on the
quality of ingredients used, so it is best made
when figs are in season and then only if they
look ripe and delicious. It is also important to
buy your Parma ham from a delicatessen where the
ham is carved to order. If you like, the figs
can be replaced with a fragrant, ripe melon,
peeled, deseeded and cut into wedges.
