Fillet Steak with
Smoked Oysters Recipe

300 g/10
oz beef fillet, cut into 2 steaks

1
tablespoon soy or sunflower oil
-
50 g/2 oz onion, finely sliced
-
75 g/3 oz button mushrooms, finely sliced
-
25 ml/1 fl
oz red wine
-
25 ml/1 fl oz Beef Stock
-
1
tablespoon tomato puree
-
50 g/2 oz canned smoked oysters, drained
-
salt and
pepper
-
watercress sprigs, to garnish
Method:

Carefully cut three-quarters of the way through each
steak and open out butterfly fashion.

Place between 2
sheets of greaseproof paper and beat with a rolling pin
to an even thickness.

Season and brush lightly with a
little oil. Place under a preheated hot grill and cook
for 6-10 minutes, turning once.

Meanwhile, heat the remaining oil in a pan and
sauté the onions and
mushrooms for a few minutes until they have softened.

Add the wine, stock and tomato puree and simmer for 3-4
minutes, until the liquid is slightly reduced and the
sauce thickened. Stir in the oysters.

Spoon the sauce over the steaks and garnish with sprigs
of watercress.
