Special Occasions Recipes - Fillet Steak with Smoked Oysters Recipe

Ingredients

Serves 2

  • 300 g/10 oz beef fillet, cut into 2 steaks

  • 1 tablespoon soy or sunflower oil

  • 50 g/2 oz onion, finely sliced

  • 75 g/3 oz button mushrooms, finely sliced

  • 25 ml/1 fl oz red wine

  • 25 ml/1 fl oz Beef Stock

  • 1 tablespoon tomato puree

  • 50 g/2 oz canned smoked oysters, drained

  • salt and pepper

  • watercress sprigs, to garnish


Method:

  1. Carefully cut three-quarters of the way through each steak and open out butterfly fashion.

  2. Place between 2 sheets of greaseproof paper and beat with a rolling pin to an even thickness.

  3. Season and brush lightly with a little oil. Place under a preheated hot grill and cook for 6-10 minutes, turning once.

  4. Meanwhile, heat the remaining oil in a pan and sauté the onions and mushrooms for a few minutes until they have softened.

  5. Add the wine, stock and tomato puree and simmer for 3-4 minutes, until the liquid is slightly reduced and the sauce thickened. Stir in the oysters.

  6. Spoon the sauce over the steaks and garnish with sprigs of watercress.
