Special Occasions Recipes - Griddled Duck with Oranges and Cranberries Recipe

Ingredients

Serves 4

  • 4 Barbary duck breasts

  • 2 oranges

  • 125 g/4 oz cranberries

  • 50 g/2 oz light brown sugar

  • 1 tablespoon honey

  • sea salt and pepper


Method:

  1. Heat a griddle pan or nonstick frying pan. Score the skin of the duck breast through to the flesh - this allows the fat to be released and the skin to go crispy.

  2. Place the duck breasts on the griddle pan or nonstick frying pan and cook them on the skin side for 6-10 minutes and then on the other side for 4-6 minutes.

  3. Remove the rind and pith from the oranges, then segment the flesh. Place the oranges, cranberries, sugar and seasoning in a saucepan and simmer to soften the cranberries.

  4. Finally, add the honey to the sauce. Remove the duck from the griddle, slice and serve with the orange and cranberry sauce.
