Special Occasions Recipes - Griddled Italian Lamb with Rosemary Oil Recipe

Ingredients

Serves 4

  • 2 lamb fillets, trimmed of fat

  • 4 garlic cloves, cut into slivers

  • a few small rosemary sprigs

  • 2 red onions, quartered

  • 1 tablespoon chopped rosemary

  • 4 tablespoons olive oil

  • sea salt and pepper

  • freshly cooked pasta, to serve

To garnish:

  • fresh Parmesan cheese shavings

  • flat leaf parsley


Method:

  1. Make small incisions with a sharp knife all over the fillets and insert the garlic slivers and rosemary sprigs.

  2. Heat a griddle pan or nonstick frying pan, put on the fillets, and cook, turning occasionally, until charred all over (about 20 minutes for rare, and 30-40 minutes for well done). Add the onions for the last 10 minutes and char on the outside.  

  3. Place the chopped rosemary and oil in a pestle and mortar and work to release the flavors. Season.

  4. Allow the lamb to rest for 5 minutes before carving into slices. Spoon the rosemary oil over the top and serve at once with the griddled onions.

  5. Serve with fresh pasta, garnished with flat leaf parsley and Parmesan shavings.
