Special Occasions Recipes - Griddled Lobster Tails with Oregano Butter Recipe

Ingredients

Serves 4

  • 125 g/4 oz butter, at room temperature

  • 1 large bunch of oregano, chopped

  • 4 raw lobster tails, halved lengthways

  • sea salt and pepper 

To serve:

  • 2 lemons, cut into wedges

  • new potatoes

  • salad


Method:

  1. Place the butter and oregano in a bowl, mix together and season to taste with salt and pepper.

  2. Place the butter in a rough sausage shape on some greaseproof paper, roll and twist the ends tightly and place in the freezer to chill and harden for 10 minutes.

  3. Heat a griddle pan or nonstick frying pan, place the lobster tails on the griddle and cook for 5 minutes on each side. The shell will turn pink and the flesh white.

  4. Place the lemons on the griddle for 3 minutes to color up and warm the lemon juice. Serve the lobsters with the lemon wedges, accompanied by a salad and new potatoes.

  5. Remove the oregano butter from the freezer. Slice and arrange on top of the cooked lobsters to serve.
