Griddled Lobster
Tails with Oregano Butter Recipe
Ingredients

125 g/4 oz butter, at room temperature
1
large bunch of oregano, chopped
4
raw lobster tails, halved lengthways
sea salt and pepper
To serve:
2
lemons, cut into wedges
new potatoes
salad
Method:
Place the
butter and oregano in a bowl, mix together and
season to taste with salt and pepper.
Place the
butter in a rough sausage shape on some
greaseproof paper, roll and twist the ends
tightly and place in the freezer to chill and
harden for 10 minutes.
Heat a
griddle pan or nonstick frying pan, place the
lobster tails on the griddle and cook for 5
minutes on each side. The shell will turn pink
and the flesh white.
Place the
lemons on the griddle for 3 minutes to color up
and warm the lemon juice. Serve the lobsters
with the lemon wedges, accompanied by a salad
and new potatoes.
Remove the
oregano butter from the freezer. Slice and
arrange on top of the cooked lobsters to serve.
