Special Occasions Recipes - Griddled Mahi Mahi with Lime and Wasabi Butter Recipe

Ingredients

Serves 4

  • 125 g/4 oz butter, at room temperature

  • grated rind and juice of 1 lime

  • 2 teaspoons wasabi paste

  • 4 x 175 g/6 oz mahi mahi steaks

  • sea salt and pepper


Method:

  1. Place the butter, lime rind and juice and wasabi paste in a food processor and blend well.

  2. Spoon the butter on to greaseproof paper, wrap the paper round and roll into a sausage shape. Refrigerate for 30 minutes until firm.

  3. Heat a griddle pan or nonstick frying pan and cook the fish for 4 minutes on each side. To get a criss-cross effect if using a ridged griddle pan, cook the fish on one side for 2 minutes on a high heat, then give the fish a quarter turn and cook for another 2 minutes.

  4. Repeat for the other side. The fish is cooked when firm to the touch and charred.

  5. Cut the butter into 8 equal slices. Top each piece of fish with 2 slices of butter and serve immediately.

Note: Mahi mahi is similar in texture to tuna and swordfish, which can be substituted for it. The wasabi butter also goes well with other fish and chicken.
