Shells with Garlic and Mushrooms Recipe

pint mussels, scrubbed and debearded

175 g/6 oz
queen
scallops
-
50 g/2 oz
butter
-
1 tablespoon finely chopped onion
-
1
garlic clove, crushed
-
50 g/2 oz
button mushrooms,
sliced
-
50 g/2 oz
fresh white breadcrumbs
-
150 ml/1/4
pint dry white wine
-
1 tablespoon lemon juice
-
1 tablespoon chopped parsley
-
salt and pepper
Method:

Place the
mussels in an ovenproof dish with a little water.
Put in a preheated oven, 180°C (350°F), Gas Mark 4,
until they open. Remove the mussels from the shells.
Separate the white and coral parts of the scallops.

Melt half of the butter in a frying pan and
sauté
the onion, garlic and mushrooms until they are
lightly colored. Mix in the mussels and scallops
and heat through gently.

Butter 4 deep scallop shells or ramekin dishes and
sprinkle in half of the breadcrumbs. Divide the
seafood mixture between the shells.

Boil 4
tablespoons of water with the wine and lemon juice
until well reduced and spoon over the shells.

Combine the remaining breadcrumbs with the chopped
parsley and seasoning and scatter over the shells.
Melt the remaining butter and pour over the top.

Place the shells on a baking tray and bake in a
preheated oven, 180°C (350°F), Gas Mark 4, for 15
minutes until golden brown.
