250 g/8 oz
chicken livers, trimmed
2 shallots,
coarsely chopped
2 garlic
cloves, halved
2 duck breasts,
cooked, skinned and chopped
2 eggs, beaten
2 tablespoons
sherry
150 ml/1/4 pint
double cream
fresh bay
leaves
juniper berries
10 streaky
bacon rashers
salt and pepper
Method:
Using a food processor or blender, process the
chicken livers, shallots, garlic and duck
breasts until smooth.
Gradually add the eggs,
sherry and cream, and season well with salt and
pepper.
Arrange the bay leaves and juniper berries in
the base of a 500 g/1lb loaf tin. Stretch the
bacon rashers to line the base and sides of tin.
Spoon in the chicken mixture and fold the excess
bacon over the top. Put the loaf tin in a
roasting tin half-filled with boiling water.
Bake in a preheated oven, 180°C (350°F), Gas
Mark 4, for 1 hour or until a skewer inserted in
the centre comes out quite dry and the mixture
is shrinking around the sides.
Leave to cool with a weight placed on the top
and chill.
