Special Occasions Recipes - Noisettes of Lamb with Pomegranates Recipe

Ingredients

Serves 2

  • 4 lamb noisenes, trimmed of fat

  • 1/2 pomegranate

  • 1 spring onion, finely chopped

  • a few black peppercorns, lightly crushed

  • 50 ml/2 fl oz lamb or Beef Stock

  • 50 ml/2 fl oz red wine

  • parsley sprigs, to garnish


Method:

  1. Place the noisettes in a shallow dish in one layer. Using a lemon squeezer, squeeze the juice from the pomegranate and pour it over the lamb.

  2. Add the spring onion and peppercorns. Cover and leave to marinate for at least 2 hours. Drain the noisettes, reserving the marinade, and dry them on kitchen paper.

  3. Fry the lamb noisettes in a nonstick frying pan, without added fat, to seal them on both sides. Pour over the stock and red wine.

  4. Simmer, uncovered, until the liquid has reduced by about half. Add the reserved marinade and bring to the boil.

  5. Remove the noisettes from the pan with a slotted spoon and arrange on a warmed serving plate. Garnish  parsley sprigs. Pour the sauce over and serve.
